Fabien Jouves farms his 21 hectare domaine in Occitanie biodynamically and eschews the use of additives in the cellar, utilizing minimal sulfur additions before bottling if necessary.  This cuveè is composed of 100% Malbec (Côt), is de-stemmed then fermented in concrete before it ages in amphora for 6 months.  Dark-fruited, structured and age-worthy.
